In the Ajala chocolate factory in Brno, only selected cocoa beans and cane juice are used for the production of Ajala chocolate . It takes about ten days to transform a cocoa bean into a bar of chocolate. Cocoa beans come from proven destinations such as Central and South America , these are the original regions where beans have been grown since time immemorial. The result is an excellent taste that ordinary cocoa beans cannot compare with. All Ajala chocolates are produced in the Czech Republic , specifically in Brno, and for other raw materials they try to use primarily Czech sources, including packaging made of hand-printed Calico papers.

Chocolate shop Ajala was founded in Brno in 2014 by Filip Teplý and his wife Silvia. The inspiration to make chocolate came after tasting traditional Mayan chocolate from Guatemala, which was brought to them by a friend. This experience appealed to them so much that they decided to make their own chocolate according to the original methods, which led to the establishment of the Ajala manufactory.
Ajala makes its chocolate using the "bean-to-bar" method, which means that it makes chocolate directly from cocoa beans, not semi-finished products. This process involves carefully selecting and roasting the beans, grinding them on granite stones and then aging the chocolate mass. The whole process of making one bar of chocolate takes about 10 days.
Ajala Chocolate Factory emphasizes the quality of ingredients and the ethical sourcing of cocoa beans , which come from various parts of Central and South America, such as the Dominican Republic, Ecuador, Grenada, Haiti, Jamaica, Colombia, Peru and Venezuela.
Ajala is characterized by using panel, which is sugarcane juice, instead of regular refined sugar. This approach preserves maximum nutrients and adds a unique flavor to the chocolate. Ajala offers a variety of chocolates, including flower and orange, coconut and pineapple flavors, or even coffee.
Since its inception, Ajala has become an internationally recognized chocolatier. She won several prizes at prestigious competitions such as the International Chocolate Awards.
Ajala's philosophy is not only to produce quality chocolate, but also to restore traditional production methods and promote ethical trade in cocoa . The factory tries to continue the historical tradition of Czechoslovakia as one of the largest processors of cocoa beans in the world.
