How decaffeinated coffee is made
At the beginning of the 20th century, the son of a German coffee merchant Dr. Ludwig Roselius, who was convinced that high doses of caffeine were the cause of his father's early death. Caffeine is already removed from the coffee beans themselves, i.e. before roasting and grinding. There are several processes through which coffee gets rid of this component. The two most used are:
Basic processes for making decaffeinated coffee
- Coffee beans are soaked in a special solvent that extracts caffeine from them.
- The so-called Swiss water process – coffee beans are soaked in water for 8-10 hours and then filtered through carbon filters that trap caffeine.
The disadvantage of the first procedure is the risk of solvent residues remaining in the coffee. At the same time, the use of chemical substances can lead to the unwanted release of valuable oils and other substances, to which coffee owes its taste and aroma.
The second procedure is significantly more gentle in this respect, but at the same time also more expensive. And there is a certain risk of disturbing the aroma or taste even with this technique, but in general it is true that when it is used, the coffee will retain the maximum possible quality. Does this mean that coffee prepared in this way contains no caffeine?
No, some residual amount remains. According to experts, it is roughly 3 mg per one quarter-liter cup of coffee. When you consider that the same amount of caffeinated coffee contains 70-140 mg of caffeine, the difference is noticeable.
What does decaffeinated coffee not offer you?
Primarily the stimulating effect and related effects:
- improving mental functions, memory or mood;
- acceleration of metabolism and thereby support fat burning;
- increasing physical performance.
